Smoked salmon soup

Ever since moving to Finland about 9 and half years ago, I had a chance to try many salmon soups. Finland is very well known to serve some of the best salmon soups in the world, but I wasn’t as impressed with that many as I was expecting. Out of all of the restaurants, cafes and even some home cooked salmon soups, there were maybe 2-3 of them which made me feel like I’ve been eating something really special and delicious.

Muutettuani Suomeen noin 9 ja puoli vuotta sitten. Olen saanut maistaa monen monta lohikeittoa. Suomi on tosi tunnettu maailman parhaista lohikeitoistaan, se on jo käsite maailmalla. Mutta en ollut loppujen lopuksi hirveän vakuuttunut monestakaan kokeilemasta keitosta. Kaikista ravintoloiden, kahviloiden ja jopa kotitekoisista keitoista, ehkä 2-3 saivat minut tunteman että olen syönyt jotakin todella erikoista ja herkullista.

This made me want to experiment in my own kitchen and come up with the best ( in my mind ) salmon soup recipe by far. I love anything that is smoked/ has smokey taste, so I wanted to use smoked salmon for this recipe, but you can also just use “normal”, fresh salmon too and add that smokey taste by shredding some smoked cheese into your soup at the end of the cooking.

Se saikin minut minut kokeilemaan omassa keittiössäni, jotta pystyisin kehittämään (omasta mielestäni) tähän asti parhaan lohikeitto reseptin. Rakastan kaikkea savustettua/jossa on savun maku. Joten halusin käyttää savustettua lohta tässä reseptissä. Mutta voit myös käyttää “normaalia” tuoretta lohta. Ja lisätä savun makua, raastamalla savunmakuista juustoa keittoon keittämisen ihan loppuvaiheessa.

*Here is how I make my soup ( serves 4 ):

1 tablespoon butter ( or olive oil )

1 spring onion ( diced )

9 dcl of water or fish stock

2 handfuls of fresh green peas

400 grams of salmon / smoked salmon

3 potatoes ( cubed )

lots of freshly chopped up dill

1 carrot ( cubed )

1 tablespoon of flour

2 dcl of cooking cream

1/2 teaspoon black pepper

salt

1 bay leaf

2 cloves of garlic

lemon zest

*How to:

Heat the butter in the soup pot and add onion and carrot to it. Then add dill, pepper and bay leaf, stir. Add water and then season with salt. Toss in fish filets and boil for 5 minutes on high. Lower the heat to medium high.

Carefully take away salmon filets from the pot and transfer them on a plate. Add the potatoes and peas to the soup pot and boil them until they’re soft/ ready. Mix flour and cream in a small bowl and add them to the soup. Stir everything. Slice/ shred the salmon filets and add it to the soup pot. Let everything boil for a little and then season the soup with the salt.

Remove the soup pot from the stove, divide the soup between 4 soup plates and grate bit of lemon zest over each plate. Enjoy along with some rye bread or rye bread crackers.

 

*Näin valmistan keittoni (4 annosta)

1 Ruokalusikka voita (tai oliivi öljyä)

1 Talvisipuli (paloiteltu)

9 dl vettä

Kaksi kourallista tuoreita herneitä

400g lohta / savustettua lohta

3 Perunaa (kuutioitu)

Paljon tuoretta hienoksi hakattua tilliä

1 Porkkana (kuutioitu)

1 Ruokalusikka vehnäjauhoja

2 dl Ruokakermaa

1/2 Teelusikka Mustapippuria

Suolaa

1 Laakerinlehti

2 valkosipulin kynttä

Sitruunan kuorta????
*Tee näin:

Kuumenna voi kattilassa, lisää sipuli ja porkkana. Sitten lisää tilli, mustapippuri ja laakerinlehti, hämmennä. Lisää vesi ja mausta suolalla. Heitä mukaan kala fileet ja keitä kovalla lämmöllä 5 min. Vähennä lämpö puoleen.

Ota kala fileet ulos varovasti, ja laita ne lautaselle. Lisää perunat ja herneet keittoon, ja keitä kunnes ne ovat pehmeitä / valmiita. Sekoita vehnäjauho ja ruokakerma pienessä kulhossa, ja lisää sekoitus lopuksi keittoon. Sekoita keittoa. Paloittele / suikaloi kala fileet, ja lisää keittoon. Anna keiton kiehua hetken, ja mausta sitten keitto suolalla.

Nosta keitto kattila liedeltä. Jaa keitto neljän lautasen kesken. Raasta vähän sitruunan kuorta jokaisen annoksen päälle. Nauti ruis leivän tai ruis sipsien kanssa.
